Praktik Pembuatan Rengginang Ubi Jalar Upaya Pemberdayaan Masyarakat Berbasis Potensi Lokal Di Desa Besakih Bali

Abstrak

Desa Besakih yang terletak di kawasan kaki Gunung Agung, dikenal sebagai desa dengan nilai budaya dan sejarah yang tinggi. Potensi lainnya yaitu di sektor pertanian dan perkebunan. Potensi-potensi ini menunjukan bahwa Desa Besakih tidak hanya kaya akan sumber daya alamnya, tetapi juga berpeluang besar dalam pengembangan sektor ekonomi dari potensi alamnya. Pengabdian masyarakat melalui praktik pembuatan rengginang berbahan dasar ubi jalar bertujuan untuk memanfaatkan potensi lokal Desa Besakih melalui inovasi produk olahan pangan berbasis ubi jalar. Dengan menggunakan pendekatan Asssets-Based Community Development (ABCD) yang menekankan pemanfaatan aset lokal sebagai dasar kegiatan praktik rengginang ubi jalar. Kegiatan diawali dengan identifikasi potensi desa melalui diskusi bersama warga lokal secara daring. Tahapan kegiatan mencakup sosialisasi, praktik pembuatan, dan refleksi atau evaluasi. Hasil pengabdian masyarakat ini menunjukan inovasi rengginang berbasis ubi jalar diterima positif oleh ibu-ibu yang hadir karena memberikan alternatif pengelolaan hasil pertanian yang inovatif dari ubi jalar yang biasanya diolah makanan tradisional. Namun, terdapat tantangan di proses pengeringan karena curah hujan yang cukup mendominasi di Desa Besakih. Dari evaluasi, mengindikasikan bahwa keterlibatan masyarakat masih perlu ditingkatkan untuk mendukung keberlanjutan inovasi. Metode ABCD yang digunakan efektif digunakan untuk mengoptimalkan potensi lokal. Namun dalam implementasinya memerlukan dukungan lebih lanjut, baik dalam bentuk pelatihan lanjutan, akses teknologi sederhana untuk pengeringan, maupun penguatan kelembagaan, dan pemasaran agar praktik ini dapat dikembangkan sebagai produk UMKM berbasis potensi lokal dan masyarakat.
